You are enjoying a role model experience, like mother and daughter or older and younger sister or aunt and niece. That's great. She doubtless may find you the American a little too warm at times.
So, don't tell her you are "infatuated" with her, etc. Don't bother her with more than the occasional message. Do ask her for summer reading auf Deutsch. If you are continuing in her classes through 12th grade, great, then ask her for recommendation(s) to college(s), and be sure to write her during the summer after graduation, thanking her. And, write to her during your frosh year. See how that goes, maybe ask her advice on something.
If you aren't able to take more classes with her, then ask your counselor if you can do a one-unit course of directed reading that she could grade, in German literature, etc., as you really like German. That may not be possible, and hoping your school offers German through the 12th grade/level 3 or 4.
