I'm not sure what level you're at, but I think an interesting dissertation could consider chirality. This is the nature of things to have a non-superimposable mirror image. Consider your hands. Drugs used to be racemic, until it was discovered that the two could have drastically different effects! The landmark case was that of thalidomide. The origin of the Food and Drug Administration can be traced back to problems with thalidomide. "Thalidomide is racemic – it contains both left- and right-handed isomers in equal amounts. The (R) enantiomer is effective against morning sickness but the (S) is teratogenic and causes birth defects." Practically everything in a living organism occurs as only one enantiomer (the name for left vs right-handed molecules). Scientists still have no idea how this happened. This is also why drug enantiomers can have different effects.

Write the dissertation about finding the origin of bacteria in our water. For example, Lake Washington near Seattle had to close some beaches because of a high bacterial count and it was found that the main culprit was dog feces. Previously it was thought that geese feces caused the problem. Since we don't have much industry anymore and we have been drastically increasing our dog flocks, chemical pollution is down but bacterial pollution is up big time.
